Asparagus with Tomato Vinaigrette

Ingredients
- 1 lb. asparagus, trimmed
- 1 small sweet onion, minced
- 3 Tbsp. bottled fat-free red wine vinaigrette
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. snipped fresh chives, divided
- 2 ripe tomatoes, peeled, seeded and diced
Directions

Bring pot of salted water to boiling. Add asparagus and cook until barely tender (about 5 minutes).

Transfer asparagus to ice water to cool. Drain; pat dry with paper towels.

Arrange asparagus on serving platter. In a small bowl stir together onion, vinaigrette, lemon juice and ! Tbsp. of the chives. Stir in tomatoes, season with salt and pepper. Spoon over asparagus. Sprinkle with remaining chive. Serve at room temperature.
