Asparagus Turnovers

Ingredients

  • 1 lb. puff pastry
  • 1/2 cup cream cheese
  • Zest and juice of 1/2 lemon
  • 1 to 2 Tbsp. minced fresh chives
  • 1/4 cup grated parmesan cheese, divided use
  • Salt and ground black pepper
  • 6 thin slices cooled smoked ham
  • 1 1/4 lb. asparagus, trimmed
  • 1 Tbsp. olive oil

Directions

  1. Heat oven to 400 degrees.

  2. On a lightly floured surface, roll puff pastry to 1/8 inch. Cut into 6 squares; set aside.

  3. In a bowl, combine cream cheese, lemon zest, lemon juice, chives and 3 Tbsp. of the parmesan cheese and mix well. Season to taste with salt and pepper.

  4. Divide mixture among pastry squares and spread to 1/2 inch of edges. Top cream cheese mixture with a slice of ham and several spears asparagus, leaving asparagus tips exposed.

  5. Brush edges with water and fold pastry over each side to form a pouch, pressing edges gently to seal. Brush with olive oil and sprinkle with remaining cheese.

  6. Arrange pouches on baking sheet and bake 20 minutes or until pastry is golden brown. Serve immediately.
