Asparagus and Carrot Saute with Ginger and Orange

Ingredients

  • 1 Tbsp. butter
  • 4 medium carrots (8 oz.) sliced on sharp diagonal (1/4 inch)
  • 1 Tbsp. minced fresh ginger
  • 1 1/2 tsp. minced garlic
  • 1 lb. medium asparagus, halve diagonally
  • 1/3 orange juice
  • 1/4 cup water
  • 3/4 tsp. grated orange peel
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Melt butter in large nonstick skillet over medium-low heat. Cook carrots 3 minutes, stirring occasionally. Add ginger and garlic. cook 1 minute or until fragrant, stirring frequently.

  2. Add asparagus and orange juice; cook 3 to 4 minutes, stirring occasionally. Add water and orange peel, increase heat to medium-high. Cook 5 to 8 minutes or until liquid has evaporated and vegetables are crisp-tender, stirring occasionally. Sprinkle with salt and pepper.
