Ingredients

• 1 1/2 pounds chicken breast
• salt and pepper
• 1 can italian diced tomatoes
• 1/4 cup water
• 1/4 cup olive oil
• 1 tbls garlic
• 1 tbls basil
• Italian seasoning
• 2-4 cups shredded mozzarella cheese
• 1 6 oz box chicken stuffing mix
• Balsamic Vinegar

Directions

1. Pre-heat oven to 400

2. Spray inside of glass baking dish 9X13

3. Cube chicken and toss in salt and lay in the bottom of the pan in one layer

4. Stir together stuffing mix, tomatoes, garlic and basic and water and olive oil and set aside to soften

5. Spread cheese in a thick layer over the chicken, then spread the softened stuffing mix

6. salt and pepper over the stuffing, then sprinkle balsamic vinegar over the bake and put in oven for 30 minutes uncovered

7. take out of oven and confirm the chicken is done then sprinkle Parmesan cheese and cover to melt
