Afro Cooking School Cheesecake

Ingredients

  • 1/4 cup butter
  • 3/4 cup sugar
  • 5 egg yolks
  • 2 tsp. lemon juice
  • 1 tsp. grated lemon rind
  • 1 lb. cottage cheese
  • 3/4 cup flour
  • 1/2 cup cream
  • 3 egg whites
  • Bread crumbs

Directions

  1. Cream butter and sugar. When thoroughly mixed, add egg yolks, beaten separately. Add lemon juice and grated rind.

  2. Press 1 lb. of cottage cheese through a potato ricer. Mix with flour and cream.

  3. Combine the two mixtures. Cut and fold in 3 egg whites, beaten stiff. Carefully brush a springform baking dish with oil. Sprinkle inside with bread crumbs, enough to make a 1/4 inch coating covering the bottom. Pour batter into pan, smoothing top.

  4. Bake at 350 degrees until firm to the touch. This will rise, settle and shrink.
