Afro Cooking School Cheesecake

Ingredients
- 1/4 cup butter
- 3/4 cup sugar
- 5 egg yolks
- 2 tsp. lemon juice
- 1 tsp. grated lemon rind
- 1 lb. cottage cheese
- 3/4 cup flour
- 1/2 cup cream
- 3 egg whites
- Bread crumbs
Directions

Cream butter and sugar. When thoroughly mixed, add egg yolks, beaten separately. Add lemon juice and grated rind.

Press 1 lb. of cottage cheese through a potato ricer. Mix with flour and cream.

Combine the two mixtures. Cut and fold in 3 egg whites, beaten stiff. Carefully brush a springform baking dish with oil. Sprinkle inside with bread crumbs, enough to make a 1/4 inch coating covering the bottom. Pour batter into pan, smoothing top.

Bake at 350 degrees until firm to the touch. This will rise, settle and shrink.
