Asparagus and radish Salad with Lemon Vinaigrette

Ingredients

  • 3 tsp. grated lemon peel, divided
  • 1 medium garlic clove, coarsely chopped
  • 1/4 cup coarsely chopped fresh Italian parsley
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp lemon juice
  • 1/3 cup extra-virgin olive oil
  • Salad
  • 1 lb. medium asparagus
  • 1 (6 oz.) bunch radishes
  • 8 Bibb lettuce leaves

Directions

  1. Chop 2 tsp. of the lemon peel and garlic, together until combined. Add parsley, finely chop. Place in small bowl along with salt and pepper. whisk in lemon juice. Slowly whisk in oil.

  2. Place asparagus in steamer basket over boiling water. Cover and steam 5 to 8 minutes or until crisp-tender. Arrange asparagus in single layer on large rimmed baking sheet, cool completely.

  3. Shred 2 medium radishes, quarter remaining radishes.

  4. Place lettuce leaves on platter; top with asparagus. Arrange quartered radishes around asparagus. Drizzle with vinaigrette, sprinkle with shredded radishes and remaining 1 tsp. lemon peel.
