Asparagus Rice Casserole

Ingredients

  • 2 cans green asparagus
  • 1/4 cup chopped green peppers
  • 3 Tbsp. chopped onions
  • 1/3 cup butter
  • 3 cups cooked salted rice
  • 1 can (7 oz.) solid pack tuna
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 cup asparagus juice (from cans) and milk
  • 1 tsp. prepared mustard
  • Generous dashes of tobacco
  • 2 cups shredded cheese
  • 1 cup lightly toasted almonds

Directions

  1. Drain asparagus (save liquid). Cook peppers and onions in half of the butter until limp.

  2. Blend together rice, tuna, peppers, and onions. Pour into 2-quart baking dish. Arrange asparagus spears on rice.

  3. Melt remaining butter and stir flour into it. Cook stirring until smooth. Add seasoning and fold in cheese. Pour over asparagus and sprinkle with almonds. Bake at 350 degrees for 30 minutes.
