Ingredients
- 2 1/2 cups chicken broth
- 2 oz. cream cheese, cubed
- 1/2 tsp grated lemon peel
- 1 tbsp. lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup uncooked long grain rice
- 1/4 cup minced fresh basil
Directions

In a saucepan, combine first 6 ingredients; bring to a boil. Stir with a whisk. Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
