Ingredients
- 28 oz. can diced tomatoes, undrained
- 15 oz. can black beans, rinsed and drained
- 15 oz. can kidney beans, rinsed and drained
- 1 lb. boneless beef chuck steak, cut into 1-in. cubes
- 1 lb. bulk spicy pork sausage, cooked and drained
- 2 medium onions, chopped
- 1 medium red sweet pepper, chopped
- 1 medium green pepper, chopped
- 1 cup hot chunky salsa
- 1/3 cup medium pearl barley
- 2 tbsp. chili powder
- 2 tsp. jarred roasted minced garlic
- 1 tsp salt
- 1 tsp ground cumin
- 4 cups beef stock
- 2 cups shredded Mexican cheese blend
- Corn chips
Directions

Place all of the ingredients except the cheese and chips in a slow cooker. Cook, covered, on LOW until beef is tender, 6-8 hours.

Stir in cheese. Serve with chips.
