Ingredients
- 5 lbs. baking potatoes, cut into 1/2-in. cubes
- 1 large onion, chopped
- 1/4 cup butter
- 4 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp pepper
- 3- 14.5 oz. cans chicken broth
- 1 cup shredded sharp Cheddar
- 1 cup half-and-half
- 3 tbsp. minced fresh chives
- Optional toppings: shredded Cheddar, sour cream, crumbled cooked bacon and minced chives
Directions

Place first 7 ingredients in a slow cooker. Cook, covered, on LOW until potatoes are very tender, 6-8 hours.

Mash the potatoes to desired consistency. Add sharp Cheddar, cream and chives; heat through, stirring until blended. Top as desired.
