Hearty Baked Potato Soup

Ingredients

  • 5 lbs. baking potatoes, cut into 1/2-in. cubes
  • 1 large onion, chopped
  • 1/4 cup butter
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3- 14.5 oz. cans chicken broth
  • 1 cup shredded sharp Cheddar
  • 1 cup half-and-half
  • 3 tbsp. minced fresh chives
  • Optional toppings: shredded Cheddar, sour cream, crumbled cooked bacon and minced chives

Directions

  1. Place first 7 ingredients in a slow cooker. Cook, covered, on LOW until potatoes are very tender, 6-8 hours.

  2. Mash the potatoes to desired consistency. Add sharp Cheddar, cream and chives; heat through, stirring until blended. Top as desired.
