Slow Cooker Stuffed Pepper Soup

Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 medium green peppers, chopped
  • 1 pkg. ready-to-serve brown rice
  • 3 tbsp. packed brown sugar
  • 1/2 tsp salt
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2- 15 oz. cans tomato sauce
  • 2- 14.5 oz. cans diced tomatoes, undrained
  • 32 oz. beef broth

Directions

  1. In a large skillet, cook and crumble the beef with onion over medium heat until it is no longer pink, 5-7 minutes; transfer to slow cooker. Stir in remaining ingredients.

  2. Cook, covered, on LOW until flavors are blended, 5-6 hours.
