Ingredients
- 2 cups shredded red cabbage
- 1/2 cup very thinly sliced small red onions
- 1/4 cup vegetable oil divided
- 2 Tbsp. sugar, divided
- 1 tsp. salt, divided
- 1/2 tsp. pepper, divided
- 2 Tbsp. champagne vinegar
- 3 cups shredded green cabbage
- 1/4 cup chopped dried apricots
- 1/4 cup dried currants
- 1 Tbsp. fennel seeds

In a large bowl, toss together red cabbage and onion until well mixed.

Heat 2 tbsp. oil in a large skillet until very hot, almost smoking. Add red cabbage mixture. Cook over high heat, stirring and tossing with half the sugar and half the salt and pepper for 3 to 4 minutes, or until wilted. Stir in 1 Tbsp. of the vinegar. As soon as steaming stops, remove from heart and turn into large bowl.

Repeat with green cabbage and remaining sugar, salt, pepper, and vinegar. Add to red-cabbage mixture, along with apricots, currants and fennel seeds, tossing until well blended.

Cover and refrigerate for at least 1 hour. Adjust seasoning, adding more sugar, salt and pepper, if needed, before serving.
