Pizza Soup with Garlic Toast Croutons

Ingredients

  • 28 oz. can diced tomatoes, drained
  • 15 oz. can pizza sauce
  • 1 lb. chicken breasts, cut into 1-in. pieces
  • 3 oz. pkg. sliced pepperoni, halved
  • 1 cup sliced fresh mushrooms
  • 1 small onion, chopped
  • 1/2 cup chopped green pepper
  • 1/4 tsp pepper
  • 2- 14.5 oz. cans chicken broth
  • 11.25 oz. pkg. frozen garlic Texas toast
  • 10 oz. pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded mozzarella

Directions

  1. In a slow cooker, combine first 9 ingredients. Cook, covered, on LOW until chicken is tender, 6-8 hours.

  2. Cut Texas toast into cubes; bake as directed. Add spinach to soup; heat through. Top with cheese and warm croutons.
