Ingredients
- 6 Tbsp. butter
- 1 egg, separated
- 1 lb. ground beef
- 1 lb. ground pork
- Grated rind of 1/2 lemon
- 1/2 tsp. pepper
- 1 cup bread crumbs
- Milk
- 2 Tbsp. chopped parsley
- 3 Tbsp. chopped onion
- Juice of 1/2 lemon
- 1/4 cup white wine

Cream 2 Tbsp. butter and stir in the egg yolk. Add the meats, lemon rind and pepper. Soak the bread crumbs in small amount of milk, then mix with the meat mixture. fold in the stiffly beaten egg whites and shape into 3/4-inch thick patties. chill for 30 minutes.

Melt remaining bitter in a skillet. Add the parsley and onion and cook until golden brown, stirring constantly.

Place patties in the skillet and brown on both sides over high heat. Reduce heat and add the , lemon juice and wine. Cook over low heat for 5 minutes. Place patties on a hot platter and serve the sauce separately.
