Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp. baking powder
- 1 lb. pecans, toasted and chopped
- 1 lb. candies red cherries, halved (can use a mix of red and green)
- 1 lb. seeded dates
- 1/2 lb. candies pineapple chunks
- 4 eggs
- 1 tsp. vanilla extract
Directions

Heat oven to 250 degrees.

In a small bowl, sift together the flour, sugar and baking powder.

In a separate bowl, mix together the pecans and fruits. Sift flour mixture over fruit mixture.

In a third bowl, beat eggs with an electric mixer until fluffy. Add vanilla to eggs and pour over fruit mixture. Mixture will be very thick and lumpy.

Line two (8 1//2 × 4 1/2 inch) loaf pans with foil. Pour batter into prepared pans and press down well.

Bake at 250 degrees for 2 hours. Remove cakes from pans to a wire rack and cool completely before slicing. Will keep tightly wrapped in the refrigerator for several weeks.
