Avocado-Tomato-Crab Salad

Ingredients

  • 1/2 cup spicy vegetable juice
  • 2 Tbsp. lime juice
  • 1 (8 oz.) pkg. imitation crab chunks
  • 1 small cucumber, peeled, halved lengthwise, sliced (1 1/2 cups)
  • 1 cup halved cherry or grape tomatoes
  • 1/2 cup chopped green bell peppers
  • 1/4 cup slivered red onion
  • 1/4 cup chopped fresh parsley
  • 1 avocado, chopped
  • 1 cup mixed salad greens
  • Hot pepper sauce, if desired

Directions

  1. Combine vegetable juice and lime juice in medium bowl. Add crab, cucumber, tomatoes, green pepper, onion and parsley; toss to combine. Gently stir in avocado. Garnish with salad greens; serve with hot pepper sauce.
