Avocado-Tuna Tarragon Melts

Ingredients

  • 2 Hass avocados, cut into small chunks
  • 2 95 oz.) cans albacore tuna in water, drained and flaked
  • 1/2 cup sour cream
  • 1/2 cup finely chopped celery
  • 1
  • Tbsp. chopped fresh tarragon, crushed
  • 8 slices bread4 (1 oz.) slices mozzarella cheese

Directions

  1. In medium bowl, combine avocado chunks, tuna,

  2. sour cream, celery, vinegar and tarragon; mix well.

  3. Divide and spread mixture on 4 slices of bread. Top each with a slice of cheese, then the remaining bread slices. Lightly brush or coat outside of bread with vegetable oil. Brown in a medium skillet 3 to 4 minutes per side or until cheese melts.
