Mexican Street Corn Bake

Ingredients

  • 6 cups frozen corn, thawed and drained
  • 1 cup mayo
  • 1 tsp ground chipotle pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 tbsp. chopped green onions, divided
  • 1/2 cup grated Parmesan
  • Lime wedges

Directions

  1. Preheat oven to 350. Mix first 5 ingredients and 4 tbsp. green onions; transfer to a greased 1 1/2-qt. baking dish. Sprinkle with cheese.

  2. Bake, covered, 20 minutes. Uncover; bake until bubbly and lightly browned, 15-20 minutes. Sprinkle with remaining green onions. Serve with lime wedges.
