Mini-omelettes

Cook time: 25 minutes
Serves 6 people

Ingredients

  • 8 Eggs
  • 1 Brown Onion (diced)
  • Handful of Shredded Ham (or bacon, sausage etc)
  • 1/4 Cup of Milk
  • 1/2 Teaspoon of Oil
  • 1/2 Teaspoon of Baking Powder
  • 1 Cup of Grated Cheese
  • Salt and Pepper

Directions

  1. Oven 375 deg

  2. Sauté diced onion and whatever other meats and veggies you choose until soft. Spray muffin tins with nonstick spray and fill muffin tins with veggie/meat mix.

  3. Top each with a sprinkle of cheese.

  4. In a separate bowl, beat eggs and add in milk, oil, baking powder, salt and pepper.

  5. Divide egg mix equally between muffin pans and bake 20-25 minutes. When golden brown remove from oven and let sit for 3-4 minutes to loosen from the pan.
