Arugula Salad Pizza

Ingredients

  • 1 to 1 1/4 lb. fresh or frozen (thawed) pizza dough
  • 3/4 cup marinara sauce
  • 6 oz. fresh mozzarella cheese, thinly sliced
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. honey
  • 1 (5 oz.) bag bay arugula
  • 1/4 cup packed fresh basil leaves, torn
  • 2 oz. prosciutto slices, torn into ribbons
  • 1 oz. shaved Parmesan

Directions

  1. Place a large cookie sheet in oven, Preheat oven to 475 degrees.

  2. Stretch dough round into small circle. Place on a large sheet of parchment paper, stretching to form 14-inch circle with slight rim. Spread sauce on dough; top with mozzarella in single layer. Transfer, with parchment to hot cookie sheet. Bake 15 to 20 minutes or until bottom is crisp and crust is golden brown.

  3. Meanwhile, in a large bowl, whisk together lemon juice, olive oil, honey and 1/8 tsp. each salt and pepper. Add arugula and basil, toss until well coated.

  4. Cut pizza into quarters. Top with salad, prosciutto, and Parmesan.
