Green Beans & Cabbage Slaw with Warm Bacon Dressing

Ingredients

  • 12 oz. green beans, trimmed and cut into 1-inch pieces
  • 4 strips bacon, chopped
  • 1/2 cup cider vinegar
  • 1/4 cup sugar
  • 1 pkg. shredded red cabbage
  • 1/2 cup thinly sliced red onion
  • 1/2 cup shredded carrots
  • Salt and black pepper to taste

Directions

  1. Blanch beans in a pot of boiling salted water just until tender, 4-5 minutes; immediately transfer to a bowl of ice water to stop the cooking, then drain well.

  2. Cook bacon in a saute pan until crisp; transfer to a paper towel-lined plate and pour off all but 2 tbsp. drippings.

  3. Stir in vinegar and sugar; bring to a simmer over medium heat. Add cabbage and onion; cook until softened, tossing with tongs, about 3 minutes. Stir in beans until heated through. Off heat, stir in carrots and bacon, season with salt and pepper, then serve slaw warm.
