Avocado- Papaya Salad

Ingredients

  • 1 or 2 ripe papayas, deseeded and cut into 1/4-inch slices (reserve 2 Tbsp. seeded for dressing)
  • Dressing:
  • 2/3 cup olive oil
  • 3 Tbsp. lime juice
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. papaya seeds
  • 5 tsp. honey
  • 2 small garlic cloves
  • 1 tsp. sweet paprika
  • 1/2 tsp. cumin seeds, toasted and ground
  • 1/4 tsp. sea salt
  • Pinch of freshly ground pepper
  • Salad:
  • 2 cups baby Mache
  • 2 cups baby arugula
  • 2 to 3 avocados, sliced
  • 1 1/2 Tbsp. toasted hazelnuts, coarsely chopped
  • Freshly ground pepper
  • 1 lime, cut into 8 wedges

Directions

  1. For dressing in a blender, combine all ingredients and blend until smooth.

  2. To serve, toss Mache and arugula with half of dressing, then pile greens in center of 8 salad plates. Alternate slices of papaya and avocado across greens and drizzle with remaining dressing. Sprinkle with nuts and pepper and serve with lime.
