Avocado- Papaya Salad

Ingredients
- 1 or 2 ripe papayas, deseeded and cut into 1/4-inch slices (reserve 2 Tbsp. seeded for dressing)
- Dressing:
- 2/3 cup olive oil
- 3 Tbsp. lime juice
- 3 Tbsp. rice vinegar
- 2 Tbsp. papaya seeds
- 5 tsp. honey
- 2 small garlic cloves
- 1 tsp. sweet paprika
- 1/2 tsp. cumin seeds, toasted and ground
- 1/4 tsp. sea salt
- Pinch of freshly ground pepper
- Salad:
- 2 cups baby Mache
- 2 cups baby arugula
- 2 to 3 avocados, sliced
- 1 1/2 Tbsp. toasted hazelnuts, coarsely chopped
- Freshly ground pepper
- 1 lime, cut into 8 wedges

For dressing in a blender, combine all ingredients and blend until smooth.

To serve, toss Mache and arugula with half of dressing, then pile greens in center of 8 salad plates. Alternate slices of papaya and avocado across greens and drizzle with remaining dressing. Sprinkle with nuts and pepper and serve with lime.
