Ingredients
- 1 pkg. (10 oz.) frozen whole baby carrots, cooked and drained
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup minced parsley
- 5 onion slices
Directions

Combine all ingredients in a bowl. Toss lightly to mix. Let stand a few hours, or overnight. Just before serving, remove onion slices if desired.
