Baby Limas with Tomato and Basil

Ingredients

  • 3 Tbsp. olive oil
  • 3 Tbsp. lemon juice
  • grated rind of 1 lemon, about 2 tsp.
  • 1 clove garlic, minced or pressed
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 5 cups cooked baby limas, drained, not cooled
  • 1 cup chopped tomatoes (2 medium)
  • 1/3 cup diced red onion
  • 1/4 cup chopped fresh basil

Directions

  1. In a large bowl, combine olive oil, lemon juice, lemon rind, garlic, salt and pepper. Add hot, drained beans, cool 10 to 15 minutes, stirring frequently. Add tomatoes, onion and basil. Marinate 1 to 2 hours at room temperature before serving. makes 6 cups.
