Tropical Chicken

Note: I made this recipe for my son after he was 9 months. I did not blend it all. I just made sure the chicken pieces were small enough for him to chew and gave it to him. This is one of his favorite dishes and I always keep some on hand in the freezer for nights when we don’t have any appropriate food to give him from our plates. This also smells so good when it is cooking!

Ingredients
- 1 tbsp vegetable oil
- 1/4 cup diced onion
- 6 oz boneless skinless chicken breast, chopped
- 1/4 cup long-grain brown rice
- 1/2 cup low-sodium chicken stock
- 1/2 cup diced peeled mango
Directions

In a medium saucepan, heat oil over medium-high heat.

Add onion and cook, stirring, until tender but not browned, about 5 minutes.

Add chicken and cook, stirring, until lightly browned, about 7 minutes.

Stir in rice and cook 1 minute more.

Stir in stock and mango; bring to a boil. Cover, reduce heat and simmer until rice is tender and chicken is no longer pink inside, about 40 minutes.

Let cool.

Transfer to a blender and puree on high speed to desired consistency.

Use within 3 days or place in ice cube trays and freeze.
