Ingredients
- 1 cup cooked quinoa
- 2 cups shredded kale
- 2 cups shredded carrots
- 1 chopped pear
- ⅓ c feta cheese
- ⅓ c chopped almonds
- ⅓ c raisins
- ⅓ c olive oil
- 1/4 c apple cider vinegar
- 1 T Dijon mustard
- 1/2 minced shallot
- 1/4 t salt
- 1/4 t black pepper

Transfer 1 cup cooked quinoa to large bowl to cool. Add 2 cups each shredded kale and carrots, 1 chopped pear, ⅓ cup each feta, chopped almonds, and raisins.

To make the apple cider dressing, in a jar shake together ⅓ cup olive oil, ¼ cup apple cider vinegar, 1 Tbsp. Dijon mustard, ½ minced shallot, ¼ tsp. each salt and black pepper. Toss with salad and serve. Makes 6 servings.
