Baccala Fiorentina (Dry Cod Florentine)

Ingredients

  • 1 whole dry cod (about 2 lbs.)
  • 2 cloves garlic
  • 3 Tbsp. tomato paste
  • 2 sprigs fresh mint
  • 1 tsp. washed capers
  • 1/2 cup olive or peanut oil
  • 1/2 cup flour
  • 1 cup warm water
  • pinch pepper to taste

Directions

  1. Soak fish in cold water 24 hours. Change water several times. Wash in cold water before cooking.

  2. Cut fish in 1-inch serving pieces. Roll in flour. Heat oil in skillet; brown garlic 3 minutes; fry cod 3 or 4 minutes on each side until light brown. Sprinkle lightly with pepper to taste.

  3. Blend tomato paste with warm water; pour over fish; add mint and capers; cover; simmer about 10 minutes or until tender and well done. Serve very hot.
