Backyard Supper Salad

Ingredients

  • 2 cups elbow macaroni (8 oz.)
  • 1 Tbsp. salt
  • 3 quarts boiling water
  • 1/4 cup bottled Italian salad dressing
  • 1 1/2 cup thinly sliced carrots
  • 2/3 cup mayonnaise
  • 1 tsp. salt
  • 1/2 tsp. each dry chives, fennel seed
  • 1/8 tsp. seasoned pepper
  • 2 Tbsp. vinegar
  • 2 cups cooked peas
  • 1 canned pimento, diced
  • 1 can (12 oz.) luncheon meat, cut in strips

Directions

  1. Gradually add macaroni and salt to rapidly boiling water so that water continues to boil. Cook uncovered, stirring occasionally until tender. Drain in colander. Rinse with cold water; drain again.

  2. Pour Italian dressing over carrots and chill. In bowl blend mayonnaise, remaining seasonings and pimento; toss and chill. Serve macaroni salad with carrots and luncheon meat arranged on top.
