Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. brown sugar
- 2 eggs, lightly beaten
- 1/3 cup vegetable oil
- 1/2 tsp. vanilla extract
- 1 1/2 cups buttermilk
- 6 strips bacon, cooked and crumbled
- butter, for serving, optional
- maple syrup, for serving, optional
Directions

Heat waffle iron according to manufacturer’s instructions.

In a large bowl, whisk together the flour, baking powder, baking soda, salt and brown sugar.

In a separate bowl, whisk together the eggs, oil, vanilla extract and buttermilk. Add to flour mixture and stir just until dry ingredients are moistened. Fold in bacon pieces. Cook batter in waffle iron, according to manufacturer’s instructions.

Serve immediately with butter and maple syrup, if desired.
