Bacon Bruschetta

Ingredients

  • Tomato Topping:
  • 1 1/4 lb. ripe tomatoes (about 3 medium-size), cut in 1/2-inch pieces (3 1/2 cups)
  • 2 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 2 tsp. minced garlic
  • 3/4 tsp. salt
  • 1 cup loosely packed fresh basil, chopped (1/3 cup)
  • 8 thick slices crusty Italian bread
  • 2 Tbsp. olive oil
  • 6 strips bacon (about 8 oz.), cooled, drained and crumbled

Directions

  1. Mix all topping ingredients except basil and bacon in a medium-size bowl. If serving within 1 to 2 hors, let stand at room temperature so tomatoes release their juices, or refrigerate, covered, up to 24 hours. Stir in basil.

  2. Brush both sides of bread with oil. Place bread in center of cooking grate and grill 2 to 3 minutes per side, until lightly browned.

  3. Place bread slices on serving plate. Spoon Tomato Topping on bread. Sprinkle with crumbled bacon and serve immediately.
