Bacon, Chicken and Arugula Sandwiches

Ingredients
- 6 boneless, skinless chicken breast halves
- Olive oil
- 18 bacon slices
- 6 hamburger buns
- 1 1/2 cups arugula leaves
- Dressing:
- 6 Tbsp. mayonnaise
- 4 tsp. Dijon-style mustard
- 1/2 cup chopped arugula leaves

Mix dressing ingredients together and season with salt and pepper to taste.

Preheat barbecue to medium-high. Rub chicken breasts with oil. Salt and pepper to taste. Grill 6 minutes per side or until tender and no longer pink (170 degrees). Set aside.

Cook bacon until crisp. Toast buns.

To make sandwiches, spread dressing onto each bun. Lay 1 chicken breast on each bun half, top with bacon slices and arugula. Top with remaining bum half.
