Ingredients
- 4 spicy Italian sausages
- 1 lb. cherry tomatoes
- 1 large red onion, cut through core into 3/4-inch wedges
- 1 head garlic, cloves peeled and sliced
- 2 tbsp. olive oil
- 2 tbsp. sherry vinegar
- 2 tsp herbes de Provence
- 15 oz. can great Northern beans, undrained
- 2 tbsp. fresh parsley
Directions

Preheat oven to 450. In a large ovenproof skillet, season the first 7 ingredients with salt and pepper and arrange in a single layer. Roast until the sausages are browned and cooked through, about 30 minutes. Gently stir in the beans and their liquid; sprinkle with the parsley.
