Bacon Corn Bread

Serves 4 people

Ingredients

  • 1 cup stone-ground cornmeal
  • 1 cup unbleached flour
  • 1/4 cup sugar
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup buttermilk
  • 1 cup diced, crisp-cooked bacon
  • 6 Tbsp. butter, melted
  • 1 egg, slightly beaten

Directions

  1. preheat oven to 400 degrees. Grease a 9-inch baking pan or skillet and place in oven to heat well. Stir dry ingredients together in a bowl. Stir in buttermilk, bacon, butter and egg. Mix well.

  2. Pour batter into hot pan and bake for 25 minutes or until edges are light brown. May also spoon batter into greased muffin cups and bake 20 minutes.
