Bacon and Egg Salad Open-Face Sandwiches

Ingredients
- 1/3 cup mayonnaise
- 1 Tbsp. Tabasco Green Pepper sauce
- 5 hard-cooked eggs, finely chopped
- 2 Tbsp. bacon bits
- 2 tbsp. finely chopped green onion
- 1/8 tsp. fresh ground black pepper
- 4 slices crusty sourdough bread, toasted
- 6 asparagus spears blanched and cut in half lengthwise
Directions

In a medium bowl, combine mayonnaise, and Tabasco sauce. Add hard-cooked eggs, bacon bits, green onion and black pepper; stir to coat well. Chill until ready to serve.

To serve, spread toasted bread slices with egg salad and garnish with asparagus spears, using three halves for each sandwich.
