Ingredients
- 3 Tbsp. vegetable oil, divided
- 1/2 large yellow onion, thinly sliced
- 4 green onions, thinly sliced
- 3 garlic cloves, minced
- 1 Tbsp. minced ginger
- 1 cup frozen peas
- 4 large eggs, beaten
- 2 cups leftover chilled brown jasmine rice
- 6 slices bacon (about 1/2 lb.),cooked and crumbled
- 3 Tbsp. soy sauce
- 1/2 tsp. Sriracha, or to taste
- 1 carrot, thinly sliced
Directions

Heat 1 Tbsp. oil in a large skillet. Add onion, green onions, garlic and ginger; saute 5 minutes. Stir in peas and cook 2 minutes. Transfer mixture to a medium bowl.

Add eggs to skillet, scramble 3 minutes. Stir in onion mixture and bacon. Add soy sauce and carrots and serve hot,
