Mushrooms, Marsala & Mascarpone Sauce

Ingredients

  • 3 tbsp. olive oil
  • 1 lb. cremini mushrooms, wiped clean and sliced
  • 2 large shallots, chopped
  • 4 garlic cloves, chopped
  • Salt and pepper
  • 1/2 cup marsala
  • 1/2 cup chicken stock
  • 1/2 cup mascarpone cheese

Directions

  1. In a large skillet, heat the oil over medium-high.

  2. Add the mushrooms and cook, stirring often, until deep golden and beefy in aroma, about 10 minutes. Add the shallots and garlic; season with salt and pepper. Cook, stirring often, until fragrant, 1-2 minutes. Add the marsala. Cook, stirring often, until the wine evaporates and absorbs into the mushrooms, 1-2 minutes. Add the stock. Cook until the stock reduces slightly, 2-3 minutes. Reduce the heat to low; stir in the mascarpone. Spoon over the Savory French Toast.
