Bacon, Green Onion and Cream Cheese Grits

Ingredients

  • 3 strips center-cut bacon
  • 4 cups water
  • 1 cup quick-cooking grits
  • 2 oz. cream cheese
  • salt and ground black pepper
  • 1/4 cup thinly sliced green onions

Directions

  1. Cook bacon in a medium saucepan; remove and pour off the fat, leaving just a thin film on the bottom.

  2. Carefully add the 4 cups water to the pot and bring to a boil. Slowly stir in grits, reduce heat to medium low, cover and simmer, stirring occasionally, until thick, about 5 to 7 minutes.

  3. While the grits cook, crumble the bacon and cut the cream cheese into small pieces.
  4. Stir in the cream cheese until smooth. Stir in bacon and green onions. Season to taste with salt and pepper.
