Ingredients
- 1 lb. chicken thighs
- 4 cups sliced mushrooms
- 2 cups sliced Brussels sprouts
- 2 tbsp. Boursin cheese
- 1 1/4 tsp dried thyme
- 3/4 tsp dried rosemary
- 2 tbsp. chives
- 8 oz. whole-wheat pasta
- 1 medium onion, chopped
- 4 garlic cloves, chopped
- 3/4 tsp salt
Directions

Combine pasta, onion, garlic and salt in a large pot.

Add chicken, cut into bite-size pieces.

Add mushrooms and Brussel sprouts.

Add Boursin, thyme and rosemary.

Cook it up. Pour in 4 cups of water. Bring to a boil over high heat. Boil, stirring often, until the pasta is cooked and the water has almost evaporated, 10-12 minutes. Let stand for 5 minutes, stirring occasionally, before serving. Sprinkle with chives before serving.
