Lamb & Spinach One Pot Pasta

Ingredients

  • 8 oz. whole-wheat pasta
  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 3/4 tsp salt
  • 1 lb. ground lamb
  • 6 cups chopped spinach
  • 14 oz. can diced tomatoes
  • 2 tbsp. tahini
  • 1 tsp each ground cumin, dried oregano
  • 2 tbsp. feta cheese

Directions

  1. Combine pasta, onion, garlic, and salt in a large pot. Add lamb, crumbled. Add spinach and diced tomatoes. Add tahini, cumin and oregano.

  2. Cook it up. Pour in 4 cups water. Bring to a boil over high heat. Boil, stirring often, until the pasta is cooked and the water has almost evaporated, 10-12 minutes. Let stand for 5 minutes, stirring occasionally, before serving. Sprinkle with Feta cheese before serving.
