Lemon-Garlic Edamame

Ingredients

  • 14 oz. bag edamame in pods
  • 2 tbsp. olive oil
  • 3 garlic cloves, crushed
  • 3 wide strips lemon zest
  • Salt and pepper

Directions

  1. Cook edamame as directed; drain. Heat olive oil in a large skillet over medium heat. Add garlic and lemon zest and cook until garlic softens, 3 minutes. Add the edamame and cook, tossing, until warm, 1-2 minutes; season with salt and pepper.
