Mini Pesto Pizzas

Ingredients

  • 1 cup ricotta
  • 1/2 cup chopped basil
  • 1/2 cup parsley
  • 1 lb. refrigerated pizza dough
  • Olive oil
  • Premade pesto

Directions

  1. Combine ricotta, basil and parsley; set aside. Form pizza dough into 3-inch rounds on parchment; drizzle with olive oil. Slide the dough onto a preheated pizza stone and bake at 500 until golden, about 12 minutes. Spread pesto on the crusts and dollop with the ricotta mixture. Top with more basil.
