Ingredients
- 10 halved 1 1/2-inch blue potatoes
- Olive oil
- Salt and pepper
- 1/2 cup sour cream
- 1 tbsp. crumbled blue cheese
- 1 tsp poppy seeds
- 1/4 tsp kosher salt

Toss potatoes with olive oil, salt and pepper on a rimmed baking sheet. Roast at 400 until tender, about 30 minutes. Let cool. Mix sour cream with blue cheese, poppy seeds and kosher salt; dollop over the potatoes.
