Blue Cheese Potato Bites

Ingredients

  • 10 halved 1 1/2-inch blue potatoes
  • Olive oil
  • Salt and pepper
  • 1/2 cup sour cream
  • 1 tbsp. crumbled blue cheese
  • 1 tsp poppy seeds
  • 1/4 tsp kosher salt

Directions

  1. Toss potatoes with olive oil, salt and pepper on a rimmed baking sheet. Roast at 400 until tender, about 30 minutes. Let cool. Mix sour cream with blue cheese, poppy seeds and kosher salt; dollop over the potatoes.
