Ingredients
- 3 lbs boneless skinless chicken
- 1/2 cup flour
- 4 Tsp curry powder
- 2 tsp salt
- 1/2 tsp ground peppercorns
- 1/2 cup olive oil
- 2 Tbsp fresh ginger
- 2 Tbsp minced garlic
- 2 serrano chili peppers, de-seeded and minced
- 4 cups chicken broth
- 1/2 cup peanut butter
- 1 tsp ground coriander
- 8 green onions, chopped
- 1/3 cup each of finely chopped mint and cilantro
- 2 limes cut into wedges
Directions

Rinse chicken, in a paper bag combine flour, curry powder, salt, and pepper. Shake together then add chicken pieces and shake to coat.

Heat oil in saucepan, add chicken and fry for 5 to 10 minutes until cooked evenly.

Pour off the majority of the remaining oil, then add ginger, garlic, chili pepper and 1/2 cup of the chicken broth. Cook 3 minutes, scraping pan well with spatula.

Add the peanut butter, stirring to incorporate. Add the remaining chicken broth. Let simmer for 10 minutes.

Right before serving, add the coriander and green onions, salt if necessary.

Serve with rice, topping each serving with cilantro. mint, and lime juice.
