Ya Ya’s Happy Muffins

Ingredients
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 3 eggs
- 1/2 cup raisins
- 1 1/2 cups rolled oats
- 2 cups baking mix
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tsp. cinnamon
- 1/2 cup shredded carrots
- 1 cup shredded apples
- 1 20-oz. can crushed pineapple, drained
- 1/4 cup walnuts, chopped
Directions

Combine milk, oil, and eggs in a medium bowl and heat lightly. Stir in raisins and oats, allowing to sit for 5 minutes. Add baking mix, sugar, brown sugar, cinnamon, carrots, apples, pineapple and walnuts. Mix just until moist. Spoon into greased muffin cups filling half full. Bake 20 minutes at 400 degrees.
