Bacon and Potato Pie

Ingredients

  • 1 lb. lean, thick-sliced bacon
  • 1 lb. baking potatoes
  • 1/2 lb. cheddar cheese
  • 1 onion
  • 8 eggs

Directions

  1. Cut bacon slices into square pieces. Fry until well-cooked and crisp; drain on paper towels; set aside.

  2. Peel and grate potatoes. Ro prevent the grated potatoes from discoloring while preparing other ingredients, put them in a bowl of cold water. When ready to use, be sure to drain well and squeeze or pat dry.)

  3. Grate cheese; set aside. Peel and mince onion; set aside. Butter a 9 × 13-inch shallow baking dish. Heat oven to 350 degrees.

  4. In a large bowl, beat eggs. Add bacon, potatoes, cheese and onion; stir. Pour mixture into prepared baking dish and bake about 45 minutes, or until eggs are cooked. Serve hot, warm up or at room temperature.
