Ingredients
- 4 slices bacon, cooked crispy and crumbled
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 8 oz. fresh Gruyere cheese (4 oz.)
- 1 prepared pastry shell
- 4 eggs, slightly beaten
- 1 cup light cream
- 1/4 tsp. salt
- 3 cherry tomatoes, halved
- Watercress sprigs
Directions

Saute onion until softened in large nonstick skillet; add spinach and saute until wilted, stir in bacon.

Sprinkle cheese evenly in pastry shell. Top with spinach mixture.

In a medium mixing bowl combine egg, cream and salt; mix well. Pour egg mixture into bacon mixture.

Bake in a 375 degree oven for 45 minutes or until a knife inserted halfway between center and outer edge comes out clean. Let stand 10 minutes before serving. Garnish with cherry tomatoes and watercress.
