Bacon-Spinach Tart

Ingredients

  • 4 slices bacon, cooked crispy and crumbled
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 8 oz. fresh Gruyere cheese (4 oz.)
  • 1 prepared pastry shell
  • 4 eggs, slightly beaten
  • 1 cup light cream
  • 1/4 tsp. salt
  • 3 cherry tomatoes, halved
  • Watercress sprigs

Directions

  1. Saute onion until softened in large nonstick skillet; add spinach and saute until wilted, stir in bacon.

  2. Sprinkle cheese evenly in pastry shell. Top with spinach mixture.

  3. In a medium mixing bowl combine egg, cream and salt; mix well. Pour egg mixture into bacon mixture.

  4. Bake in a 375 degree oven for 45 minutes or until a knife inserted halfway between center and outer edge comes out clean. Let stand 10 minutes before serving. Garnish with cherry tomatoes and watercress.
