Bacon-Sprinkled Chicken Salad

Serves 6 people

Ingredients

  • 2 whole chicken breasts
  • 3/4 cup bottled green-goddess dressing
  • 1/2 lb. bacon slices, cut in thin crosswise strips
  • 1 cup finely diced celery
  • 1 cup finely chopped romaine
  • 1 cup finely chopped watercress
  • Salt and white pepper

Directions

  1. Cook chicken breasts, remove skin and bones and dice meat. Mix with dressing and chill.

  2. Meanwhile, saute bacon until very crisp. Drain well, cool and set aside.

  3. Add celery, romaine and watercress to chicken. Mix well and season to taste with salt and pepper

  4. Mound in serving dish, sprinkle top with bacon.
