Bacon and Swiss Cheese Quiche

Ingredients

  • 1 (9-inch) single crust pie shell
  • 1/2 lb. bacon (9 to 11 strips)
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/2 tsp. ground nutmeg
  • 1/8 tsp. cayenne pepper
  • 1/4 cup chopped onion
  • 2 cups half-and-half
  • 4 eggs
  • 1/3 cup grated Swiss cheese
  • Paprika
  • Parsley flakes

Directions

  1. Microwave pie shell in a glass pie plate on high for 5 to 7 minutes. Cool.

  2. Arrange bacon in single layer on microwave bacon rack; top with paper towels. Microwave on high for 9 minutes, or until crisp. Cut into bite-sized pieces and sprinkle over bottom of crust.

  3. In a 1 1/2 quart casserole combine flour, salt, nutmeg, cayenne and onion; whisk in half-and-half to blend well. Microwave on high for 4 to 6 minutes, whisking every minute until hot and thick.

  4. Meanwhile in small bowl beat eggs to blend; add about 3;4 of half-and-half mixture to eggs and whisk well. Then add mixture back to warm half-and-half; microwave on medium high for 3 to 5 minutes. Pour into pie shell.

  5. Distribute cheese evenly over top, then sprinkle with paprika and parsley; microwave at medium for 6 to 9 minutes. Let stand 15 minutes.
