Ingredients
- 1 1/4 lb. scrubbed Russet potatoes, skin on
- 1 tbsp. olive oil
- 1 tsp sea salt
- 1 1/2 tsp red sumac

Preheat oven to 425. Meanwhile, cut potatoes into 1/4×3-inch sticks. In a bowl, toss fries with oil and salt.

On 2 parchment-lined baking sheets, spread out fries so they are not overlapping and bake for 25-30 minutes. Remove fries from oven, carefully turn each over. Switch positions of baking sheets and bake for another 10 minutes until fries are crispy and deep golden brown.

Remove from oven; sprinkle fries with sumac.
