Bacon-Wrapped Mahi Mahi

Ingredients

  • 2 Tbsp. olive oil
  • 1 tsp. minced fresh rosemary
  • 1 tsp. minced fresh oregano leaves
  • 1 tsp. minced garlic
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 4 skinless mahi mahi fillets OR other fish such as halibut or red snapper
  • 1 lemon, thinly sliced
  • 8 thin slices bacon

Directions

  1. Prepare grill for medium heat. (To prepare in the oven, use the broiler, placing the fish about 4 inches from heat.)

  2. Meanwhile, in a medium bowl, combine the olive oil, rosemary, oregano, garlic, salt and pepper. Add the mahi mahi and turn to coat. Let marinate at room temperature for 5 to 30 minutes.

  3. Place one or two lemon slices on top of each filet. Wrap each filet with 2 slices bacon and secure with a wooden pick.

  4. Grill fish, lemon side up, with the lid closed, for 5 minutes; turn and continue grilling 5 minutes more or until bacon is brown and fish is opaque in the center.
